世界では毎年生産される食品の約3分の1が廃棄されている。日本でも消費者レベルでの食品ロスが大きな課題である。本論文は、日本の消費者における食品ロス削減のためのデジタル技術(アプリ、プラットフォーム、AI)の役割を分析した。四章構成で、世界と日本における食品ロスの現状、原因と政府の対策、デジタル化と食品ロス削減技術、先行研究と実証研究を扱う。SNS(HelloTalk、Facebook)を通じて日本語で72項目のアンケートを2025年11月〜12月に17日間で配信し、339件の有効回答を得た。方法論的枠組みとしてTAM3とホフステードの文化的次元を統合した。回答者は性別においてほぼ均衡しており(女性52.5%)、主に18〜25歳の若年成人層(46.6%)で構成され、日本の全8地方から回答が得られた。結果として「認識のパラドックス」が明らかになった。回答者の83.5%は食品ロス削減専用アプリを知らなかったが、79.6%は『Cookpad』等の手持ち食材で検索できる「食品ロス削減機能」付きレシピアプリを知っていた。また、食品ロス削減アプリ利用者は環境への影響に関する意識が高いことが示された(p<0.01)。「知覚された使いやすさ(PEOU)」に関する障壁は、報告された障害の34.25%を占めた。社会的影響は採用の強力な予測因子であった(χ²=85.08, p<0.0001, V=0.35)。利用者の48%は採用後に食品ロスが減少したと報告した。生成型AI(例:手持ち食材に基づくChatGPTのレシピ提案)は、食品ロス削減の新たな有望な可能性を示している。

One third of global food production is wasted annually. In Japan, a significant portion of food waste occurs at the consumer level. This thesis analyses the role of digital technologies (apps, platforms, AI) in reducing food waste among consumers in Japan. The four chapters cover: FLW globally and in Japan, causes and government policies, digitalisation and technologies for FLW reduction, and empirical research with previous studies. Through a quantitative and qualitative survey (n=339) in Japanese, distributed via SNS in November-December 2025, the study examines awareness, adoption and barriers to the use of food management apps and food sharing platforms. The methodological framework integrates TAM3 with Hofstede's cultural dimensions. Respondents were nearly gender-balanced (52.5% female), predominantly young adults aged 18-25 (46.6%), and represented all 8 regions of Japan. Results reveal an "Awareness Paradox": 83.5% had never heard of dedicated FLW reduction apps, yet 79.6% knew recipe platforms like Cookpad with waste-reducing features. App users showed significantly higher environmental concern (p<0.01). Barriers related to Perceived Ease of Use (PEOU) accounted for 34.25% of reported obstacles. Social influence strongly predicts adoption (χ²=85.08, p<0.0001, V=0.35). Among active users, 48% reported reduced food waste after adoption. Generative AI (e.g., ChatGPT for recipe suggestions using ingredients on hand) represents a promising new frontier for FLW reduction.
