The global wine market is undergoing a structural transformation: consumption volumes are contracting to historic lows while the value generated keeps growing, driven by premiumization. Within this scenario, the system of institutional certifications, originally created to reduce information asymmetry between producer and consumer, is progressively losing effectiveness, eroded by the fragmentation of Italian denominations, greenwashing, and information overload. The thesis proposes the distinction between systemic trust and relational trust (Luhmann, Giddens) as an interpretive key, analyzing the case of Subconscio, an artisanal winery near Treviso that developed the concept of BioConsapevolezza: a self-certification model grounded in radical transparency and direct producer storytelling, as an alternative to bureaucratic labeling. The hypothesis is empirically tested through quantitative research conducted with SWG S.p.A. on a representative sample of 1,200 adult individuals (CAWI methodology). Results show that 63% of the sample trusts a producer who explains how they work more than a certification, and that the organic label ranks only eighth out of ten among the most effective narrative elements. The research confirms the validity of the relational model as a credible alternative to bureaucratic certification, while identifying its conditions of applicability and generational limits.
Il mercato vitivinicolo globale attraversa una trasformazione strutturale: i volumi di consumo si contraggono ai minimi storici mentre il valore generato cresce, spinto dalla premiumizzazione. In questo scenario, il sistema delle certificazioni istituzionali, nato per ridurre l'asimmetria informativa tra produttore e consumatore, perde progressivamente efficacia, eroso dalla frammentazione delle denominazioni italiane, dal greenwashing e dall'information overload. La tesi propone come chiave interpretativa la distinzione tra fiducia sistemica e fiducia relazionale (Luhmann, Giddens), analizzando il caso di Subconscio, cantina artigianale trevigiana che ha elaborato il concetto di BioConsapevolezza: un modello di auto-certificazione fondato sulla trasparenza radicale e sulla narrazione diretta del produttore, alternativo al bollino burocratico. L'ipotesi viene sottoposta a verifica empirica tramite una ricerca quantitativa condotta con SWG S.p.A. su un campione rappresentativo di 1.200 individui maggiorenni (metodologia CAWI). I risultati mostrano che il 63% del campione si fida più di un produttore che spiega come lavora che di una certificazione, e che il bollino biologico si colloca solo all'ottavo posto su dieci tra gli elementi narrativi più efficaci. La ricerca conferma la validità del modello relazionale come alternativa credibile alla certificazione burocratica, individuandone condizioni di applicabilità e limiti generazionali.
