Trends in consumption of ultra-processed foods among US citizens: an analysis from the perspective of the policy maker.

This thesis explores ultra-processed food (UPF) consumption among US adults, emphasizing the evolution of price dynamics, demographic characteristics, and policy interventions' potential impact on dietary habits. The study aims to enhance our comprehension of the intricate factors influencing modern food consumption behaviors. The first objective involves analyzing the historical evolution of UPF consumption, seeking correlations between price trends and consumption patterns over time. Subsequently, the research investigates the relationship between UPF consumption and consumer income levels, crucial for addressing dietary disparities. The thesis critically evaluates existing policies addressing UPF consumption. Then, utilizing quantitative analyses of national datasets on consumption patterns, food prices, and demographics, the study provides evidence-based recommendations for policymakers striving to reach a healthier and more sustainable food environment in the United States.
